Chicken cutlet ☝


    Chicken would be the favourite dish for all of us ( non -vegetarians )✌ ,  who will hate chicken fry , gravy , and etc.. even i was once a pure vegetarian , but when i tasted this chicken cutlet , i became so much in love with this dish . Yes , of course fish is the best of all non- veg food and it is so healthy , but then there is no wrong in tasting chicken once in  awhile ,  because you are doing it in home by yourself in a healthy way . 

             When you buy chicken cutlets or fries in shop it might be unhealthy , but when you do that in home by yourself you will be so careful in doing that and it will be healthy.

             Actually my Aunty ( mom's sister ) is the one who taught me how to do this chicken cutlet . Since i am trying this dish for the first time , my mom helped me so much in preparing this dish  , and my brother ( Jainesh ) helped me a lot in making the video, actually he is the one who gave me the idea of uploading the video , so actually i should thank them . So try this recipe  in your home ... and you will enjoy eating this yummy recipe.

Ingredients :

          1. Chicken (  Boneless 1/4 kg )
             2.  Potato   ( 3 )
             3. Shallots  (  Finely choppedi 150 g )
             4. Chilly     (  Finely chopped -10 ) 
             5. Ginger Garlic paste ( 1 spoon)
             6. Mint leaves       ( optional )
             7. Coriander leaves ( optional )
             8. Cinnamon ( 4 )
             9. Cloves ( 2 )
            10. Fennel seeds ( 1 spoon )
            11. Star anise ( 1 ) 
            12. Dry red chilly ( 4/ 5)
            13. Albumen ( 2 eggs )
            14. Bread crumbs ( 1/2 cup )
            15. Oil and Salt
    


How to do it ?
                   Firstly cook the chicken , then mince it ( just one grind ) then cook the potatoes and mash it and keep it aside . Then heat a pan , pour some oil , add chillies and  finely chopped shallots in it  , saute it until it becomes golden brown colour and add  ginger garlic paste , dry red chillies , and then add  the grinded spices ie ( cinnamon , cloves , fennel seeds , star anise ) or just add one and half  spoon of garam masala powder, then take the pan from the stove and let it aside for 2 min , add then mix  the mint and the coriander leaves( finely chopped ) with it and also add the minced chicken and mashed potato and add some salt and mix it well .

              Then make some small balls with the above mentioned  mixture , you can do it any shape you want. Then dip the balls in the albumen and then into breadcrumbs and deep fry in oil. That's all ! 

              This is actually a very easy dish ! I am sure  you will all love it .

Bittergourd fry

Hello Everyone! 

                    Bittergourd is not that BITTER for life, it actually makes our life only BETTER .  personally i love bitter gourd so much , but bitter gourd is  a vegetable which is disliked by most of the people .But we should understand that it has so much of health benefits. 
                 The one thing which i would like to tell you all is , we should not try to remove the bitter taste in it when cooking , because giving bitter taste is its nature and  intake of bitter taste is very essential for us especially diabetic patients , but we can make the taste better by making a fry, so that it enhances the taste and everyone will love to taste it. 
                  Bitter gourd is very good for skin and makes our skin glow if it is eaten frequently , and it also strengthens our immune system and it has so much of good qualities and i can keep on telling about bitter gourd for the whole day ❤ because i love it !
              
INGREDIENTS:

                     1. Bitter gourd (1/2 kg )
                     2. Turmeric powder ( 1 tsp )         
                     3. Chilly powder ( to your taste )
                     4. Ginger garlic paste (1/2 tsp )
                     5. Salt ( to taste )
                     6. Cornflour powder ( 1 spoon )

HOW TO DO IT ?
                      
                     Cut the bitter gourd into rings ( thinly sliced ) , and mix it with turmeric and chilly powder , then add salt ( to your taste )then add ginger garlic paste and cornflour powder ( to make the bitter gourd crispy )and mix it well . keep it aside for about  20 min . And then heat a pan and pour some oil , then after the oil gets heated put this bitter gourd and deep fry it !

Crispy Cauliflower Fry / Gobi 65



Who will say no to cauliflower!  of course everyone will like it !!! 

                                 It is a very easy dish, and i cannot guess a tasty and healthy snack which is better than a gobi fry. I love when the cauliflower becomes browinsh red colour after it is being deep fried,  because it would look crispy and indeed tastes crispy . This is the first time that i have tried this dish and my mom is the one who taught me how to do it and then i tried, it  came out well, and i was actually happy and surprised!☺when you taste what you have cooked and find out that it tastes superb that's the great feel.❤

 INGREDIENTS:

                            1.  A Medium size cauliflower /
                                     2 cup of cauliflower florets
                            2. Ginger garlic paste      -     1/2 spoon
                            3. Chilly chicken powder -     50 grams
                            4. Salt                                   -     to taste
                            5. cornflour powder          -     1 spoon
                            6. Gram flour                      -      2 spoons


  HOW TO DO IT ?          
                             
                             Firstly, cauliflower has to be immersed in hot water for about 10 minutes , just to clean it . Then take a bowl , place the 50 grams of chilly chicken powder in that bowl and add little amount of salt, (as the chilly chicken powder already consists of some salt content in it). then add ginger garlic paste then cornflour powder and gram flour in it and dip all the cauliflower florets , that you have cleaned in hot water, and leave it for about 20 minutes . Then keep a pan in the stove and boil some oil and after the oil gets heated put this cauliflower in it and deep fry it !

Coconut chammanthi




Coconut chammanthi is a kerala cuisine. It is a roasted coconut spice chutney powder. There are different varieties in this dish , but i have tried what my ammumma (grandma) taught me . whenever i go to my ammumma's house she will do this for me and this is one of the favourite dish of our family and we  all love it. we can have this chammanthi with idly , dosa , or even with rice , it would be very tasty .The advantage of this dish is we can have a stock of it for about  10 - 15 days , so  there is no need to do it often.There are different varieties and each one has its unique taste .Here goes the recipe,

INGREDIENTS:


1. coconut ( one )
2. coriander seeds (3 teaspoons)
3. curry leaves ( 20-25 leaves)
4. dry red chillies ( 10-12)
5. tamarind ( small lemon size)
6. salt ( to your taste)

How to do it ?
 Take a pan , pour two teaspoons of oil ,then put curry leaves chilly , coriander seeds ,tamarind and  then salt and saute it untill it becomes light brown in colour then transfer it to mixie jar and then add coconut pieces in the same pan and  sear it untill it becomes light brown in colour, then add this coconut along with the other ingredients in mixie jar and grind it to powder .

Hello!

 Welcome to Janani's kitchen, I'm Janani and I've created a blog for the first 
time  and i have titled it as Janani's kitchen . When i was thinking what can i blog about , i thought of cooking because i love cooking so much and whenever i get time i will spend time by cooking , Actually i learnt cooking because , my mother used to say that she suffered a lot without knowing how to cook, but then she started cooking yummy , that's a different story ,but still she wanted me to learn cooking and when i started doing it , all my family members started appreciating me , and automatically i started to  cook often , and now i became so much in love❤ with cooking.
